The plaque cost the guide about four euros. It stayed on the wall for twenty months after it had stopped being true. The invitations go out three weeks before the ceremony, by email, on a Thursday afternoon. Everybody in the trade knows this and nobody admits to knowing it. Rok Potočnik knew it to the hour, because he had received one in 2021 and again in 2022 and in 2023 and in 2024. He refreshes an inbox for four hours and then does a full Thursday service, thirty-eight covers, and nothing goes out that should not have gone out. A restaurant that loses a star is not written to. There is no letter, no explanation, no criteria and no appeal. It finds out because its name is not read aloud. The database in Paris updates overnight. Everything else lags: a metal sign at the junction erected by the municipality on a seven-year cycle, a tourist board brochure that went to press in March, a website nobody can edit, and a small ceramic plaque beside the door. On the Tuesday morning Rok Potočnik walks out onto the terrace, looks at the valley, goes back in and starts the bread. He does not take the plaque down. Nobody lies. The mayor declines to spend four hundred euros removing something from a business in the middle of a season. The season runs from May to October. A couple who have been coming every five or six weeks since 2022 book again eleven days after the ceremony, without having looked, and go on booking. A kitchen learns to hold the fifth course for eleven minutes without anybody ever discussing why. And in a kitchen of thirty-four covers, a man of fifty-eight knows that he is the third best cook in it, and that the star was earned by two people under forty whose names are not on the door.
