Synopsis "Natives Olivenöl (in German)"

Trotz ihres Schadstoffprofils gelten Olivenölmargen als eine sehr reiche Quelle für natürliche Antioxidantien, die Polyphenole. Letztere kommen auch in Olivenblättern und einigen Früchten wie Weintrauben vor. In dieser Studie wurden diese Polyphenole extrahiert, um sie als natürliche Antioxidantien zu bewerten und mit einem synthetischen Antioxidans, Gallussäure, verglichen. Konzentrationen von 100 bis 500 ppm dieser Polyphenole und 100 bis 200 ppm Gallussäure werden dem nativen Olivenöl zugesetzt. Die Ölproben werden unter Ofenbedingungen (T um 40 C) für 60 Tage gelagert. Die Veränderung des verwendeten Öls wurde durch die Bestimmung von Säuregrad, Peroxidzahl, Iodzahl und spezifischer Extinktion bei 232 und 270 nm überwacht.
